Restaurant - Spring

On the 14th of July 2010, after two years of
renovation, Daniel and his new team moved
Spring to its current location and it has since
been growing into a proper restaurant. Spring
restaurant is Daniel Rose’s vision of a classic
french meal: abundant and excellent products
from all over France, attentive service and
carefully chosen wines.
While Spring began as a ‘one man show’,
Spring is now a team effort with cooks,
captains, waiters, sommeliers all united by the
same purpose: to please his customers and
create an enjoyable moment at the table.

Spring Restaurant serves a ‘prix fixe’ menu.
The dishes are inspired by the market and the
French tradition, It’s 4 course menu (two
starters, a main dish and a dessert).
There is no menu or ‘à la carte’. The only thing
you shall want to choose is the wine.
The Spring story began in 1998 when Daniel
Rose moved to Paris to finish university. After
graduation, Daniel moved to Lyon to learn to
cook and enrolled in the Institut Bocuse
cooking school. After 6 years of
apprenticeship and adventure all over France,
Daniel decided to open a restaurant. Having
very little experience running a restaurant he
opened the only one he thought he could run
properly: a very small one. After a few years
of a consistently full house, Daniel discovered
an abandoned skate board shop in the center
of Paris and decided to move location.

began cooking
because he
likes eating.
Before
cooking he
studied
ancient greek,
dreamed of
kayaking from
Texas to
Guatemala, and tried to join the french
foreign legion. He began cooking after falling
in love with great french restaurants after
moving to Paris to finish university. He has
been privileged to learn alongside many
talented cooks: as an apprentice as well as
from many members of his own team.
Although originally from Chicago, Daniel has
never cooked professionally in the United
States. He began to learn to cook in Brittany

on a coal burning stove and is still learning
today.

Art Ludique Museum

Daniel’s food is decidedly French : excellent
seasonal products, balanced seasoning, and
careful cooking all inspired by tradition.

Exhibitions
Cartier at Grand Palais

The famous exhibition PIXAR, 25 YEARS OF
ANIMATION, inaugurated in New York in 2006
before touring prestigious museums around
the world, is the perfect event to showcase
the new museum’s innovative approach and
popular appeal. By showing original pieces
from the artists behind "Toy Story", "Finding
Nemo", "Ratatouille" and "Wall·e", it paid
homage to this new form of art and gave the
museum its biggest hit since opening.

Perhaps because it has been eclipsed by its
famous name and the sparkle of its diamonds,
too little is known even now about the rich
and complex history of this great house of
jewellery. Yet Cartier has played a key role in
the history of the decorative arts. Its creations
- from the classicism of the "jeweller to kings"
to the radical inventions of style modern offer a fascinating testament to the evolution
of taste and social codes.

It is an honour for the Art Ludique Museum to
open its doors with this exhibition, showing
over 500 drawings, preliminary character and
background sketches, storyboards and
sculptures, plus the spectacular "Toy Story"
zoetrope and captivating Artscape, both of
which give visitors an exceptional glimpse into
the world of animation.
This is the first in a series of large exhibitions
coming to the Art Ludique Museum, and runs
from 16th November 2013 to 2nd March
2014.
